Pepperoni and Olive Penne Pasta

Ingredients
500 grams penne pasta
100 grams pepperoni roughly chopped
100 grams Kalamata olives sliced
1 can chopped tomatoes
1 onion diced
4 cloves garlic minced
1 tablespoon tomato paste
100 grams baby spinach (optional)
1 teaspoon cracked black pepper
1 teaspoon dried oregano
1 tablespoon grated Parmesan cheese

Instructions
Cook pasta as per packet instructions, save a cup of the pasta water.
Fry onion and garlic in a pan for a two minutes then add the pepperoni and fry for another two minutes. Add can of tomatoes and tomato paste. Season with pepper and oregano. Add olives and pasta water and let simmer for five minutes. Add pasta and spinach to the sauce and serve immediately with Parmesan cheese.

For a vegetarian option you can omit the pepperoni and use mushrooms, red capsicum or other vegetables.
