Easy Mediterranean Beef Roast

This is one of my mum's famous roast recipes. This recipe is so easy to prepare, I like to meal prep the night before, so we can have this as a treat in the mid week in our busy schedule!
Ingredients:
700g-1000g beef roast
1 Tbsp onion powder
1 Tbsp garlic powder
1 Tbsp Mediterranean seasoning
2 bay leaves
1 can of diced tomatoes
Dash of Red wine ( of your choice)
1 tbsp paprika
Method:
1) Get a small bowl. Mix onion powder, garlic powder, Mediterranean seasoning and paprika all thoroughly together.
2) Rub the mixture on the beef roast.
3) Transfer the beef roast into a baking dish. Dump a can of diced tomatoes and a dash of wine into the baking dish. Place 2 bay leaves on the beef roast.
4) Cover the roast with a lid or foil. I like to let it marinate for at least 2 hours in the fridge or overnight for maximum flavour.
5) Bake slowly at 130 degrees for 2 hours.
6) I serve it with potatoes and seasonal vegetables.
