Chicken and vegetable soup with french tarragon and onion. | ||
It's soup season ! This one is a bit quicker than lovingly making up and reducing a whole pot of stock and stripping a whole chicken. I've used a secret booster ingredient to add some flavour but you can leave it out if so desired or use a stock cube instead. Ingredients ~ 1 small onion diced 2 cloves garlic 1 stick celery 2 carrots diced 1 potato diced Handful of butter beans cut up ( or green ones) 1 small tin of corn 1 head of broccoli ( *finely sliced ) 1 large chicken breast fillet 2 cups chicken stock ( pkt is fine) 1 cup water 1/2 pkt French onion soup mix @ 20 gm 1tsp chopped French tarragon ( l used fresh / frozen) it tastes better than bottled stuff and it is fairly strong . Or you can use Thyme or Oregano :) Olive oil Salt and pepper to taste. -Method - Grab your best soup pot ,saute off the onions ,garlic and root vegetables. Push to the edges of pot and put the cleaned up chicken breast into the centre (whole to sear on both sides). Add everything else *except the broccoli to your pot . Cover and simmer gently for approx 10 mins . Remove chicken and cool slightly before chopping it. Keep it covered to stop it drying out. Continue simmering soup until vegetables are softened @ 25 mins ,then add the broccoli . Taste test and add chicken back in. Serve with garlic bread . Serves 4 . | ||
