Easy Fried Rice

Hey everyone! I wanted to share a super easy and tasty fried rice recipe that s perfect for a quick lunch or dinner. It s great for using up leftover rice and whatever veggies you have in the fridge. You can make this all the time when you don t feel like doing anything complicated but still want something warm and filling.
Ingredients:
2 cups cooked rice (cold/leftover rice works best)
2 tablespoons oil (vegetable or sesame)
2 eggs (optional)
1 small onion, chopped
2 garlic cloves, minced
1 cup mixed frozen vegetables (peas, carrots, corn, etc.)
2 3 tablespoons soy sauce (adjust to taste)
1 teaspoon sesame oil (optional)
Salt and pepper to taste
Spring onions (optional, for garnish)
Instructions:
If using eggs, heat 1 tbsp oil in a pan and scramble the eggs. Set aside.
Add remaining oil to the pan and saut茅 onion and garlic for a minute or two.
Toss in the veggies and stir-fry for a few minutes until heated.
Add the rice, break up any clumps, and mix well.
Pour in soy sauce and sesame oil (if using). Stir everything together and fry for a few more minutes.
Add the eggs back in, mix, and season with salt and pepper.
Top with spring onions if you have them. Done!

                    Hubby likes my fried rice ( but I am sick of it ) Dodgy tummy would need no garlic Maybe some ginger in place of Must remember to have spring onions next time They tend to be used in salads with me

                                            Similar to mine but I fry the eggs. Also I put in mushrooms, leeks and capsicum and other vegetables but not frozen. I do not use carrots either. I use soy sauce and worstershire sauce to taste. I agree, a quick easy meal.
