Finger licking Turkey fritters with delicious dipping sauce

This is one of our family favorites. Funny enough, whenever this recipe is on the menu, everyone turns up at the dinner table on time and ready to dig in!
Ingredients:800g -1kg Turkey breasts ( you can use chicken breasts if preferred)
3 tbsp mayonnaise
2 tsp chives
1.5 cup of grated tasty cheese
3 eggs
2 tbsp flour
Salt and pepper to taste
Dash of oil
Method:
1) Slice turkey breast horizontally in half, then chopped them into cubes
2) Transfer them into a big bowl. Then add in the remaining ingredients. Mix well. I then put it into the fridge for at least 2 hours. This is to firm up the batter before frying.
3) Spoon content into the frying pan and fry them in oil until both sides are golden brown.
Dipping sauce:
Buttermilk : 1 cup (Mix the 250 ml milk and 1 tbsp lemon juice in a jug. Leave at room temperature for 5-10 mins until the milk has thickened slightly)
Black pepper : 1 tsp
Cayenne pepper: 1 tsp
Mix together thoroughly in a small bowl.
