Italian Mussels

Finely chop up a little carrot, onion and celery (the colours of the Italian flag!)...add a healthy splash of oil to a pan... I use virgin olive oil...and then lightly fry them...add one fillet of any white fish (your choice) cut into small cubes...100 grams of bacon diced up...and 125 grams of loosely chopped mussel meat (I use frozen cooked mussel meat...from the supermarket) PER PERSON....a tiny sprinkle of chicken stock...a splash of fish sauce (I use a sprinkle of cumin and coriander too) add milk...a light dusting of flour...maybe some herbs and let it thicken up.....while in another pan you have been cooking up your favourite pasta in boiling water for around 7 minutes....drain the pasta...stir it into the sauce..et voila..
