A Real Gourmet Burger

You will need a griddle pan and a lid or other pan to cover it
Each burger is made out of 250 grams of beef mince(or pork and beef if you prefer...but make sure it is cooked enough!)....season the mince well with black pepper and salt...shape them into balls and then put them into the fridge for 24 hours (there is some evaporation and the mince bounds tightly together...there is a real difference.
Next chop up chunks of beetroot onion and potatoes in equal quanties...add oil and vinegar (malt or balsamic are my favourites but whatever you have) a big splash of each...season it...toss it about and dump it in a oiled baking tin...into the oven at a medium heat until it is all tender...
Get that griddle pan oiled up on the heat....cut 2 chunks of cheese (if required....) get those Burgers out the fridge..make them into turrets...and when the pan starts smoking whack them in and cover it..when they are cooked enough turn them over..stick the cheese on top and cover them until about to serve...just before serving pour a little water into the pan...there will be a burst of steam that melts the cheese completely...see picture!...enjoy...
