Easy Vegetable Noodles | ||
This is a quick and easy meal, you can add extra vegetables according to your taste. You can also add chicken if you prefer, cut into pieces and fry with the onion, garlic and ginger until chicken is cooked. For those who do not like curry you can leave it out. I add 2 eggs that I have beaten and fried, cut into strips to serve. Serves 4 Ingredients 400g noodles of choice, cook as per instructions on the packet. 1/4 cup soy sauce 1/4 cup Chinese cooking wine 1 tablespoon curry powder 1 teaspoon sugar I tablespoon vegetable oil 1 onion, thinly sliced 4 cloves garlic, crushed 1/2 teaspoon chilli flakes (optional) 2 teaspoons finely grated ginger or 1/4 teaspoon ground ginger 1 red capsicum, thinly sliced 1 carrot, thinly sliced 1 head of broccoli, chopped into small pieces Instructions 1. Combine soy sauce, cooking wine, curry powder and sugar, set aside. 2. Heat oil in wok or large fry pan on medium heat. Add onion, garlic, ginger and chilli flakes, cook for 1 minute. Add capsicum, carrot and broccoli and cook for further 2 minutes. 3. Add prepared noodles and sauce to pan and toss well until heated through. Serve and enjoy! | ||
