Creamy Garlic Parmesan Chicken

Ingredients -
2 large chicken breasts (halved horizontally to make 4 cutlets)
Salt and pepper, to taste
1 tsp garlic powder
2 tbsp olive oil
3 4 garlic cloves, minced
1 cup heavy cream
½ cup grated Parmesan cheese
½ tsp Italian seasoning
1 cup baby spinach (optional)
Fresh parsley (for garnish)
Instructions:
Season the Chicken:
Pat the chicken dry. Season both sides with salt, pepper, and garlic powder.
Sear the Chicken:
Heat olive oil in a skillet over medium-high heat. Cook the chicken cutlets for 4 5 minutes per side, or until golden brown and cooked through. Remove and set aside.
Make the Sauce:
In the same skillet, reduce heat to medium. Add minced garlic and saute for 30 seconds until fragrant (don t burn it!).
Add Cream and Cheese:
Pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese and Italian seasoning. Let it cook for 2 3 minutes until it thickens slightly.
Combine:
Add the chicken back into the skillet. Spoon the sauce over it and simmer for another 2 3 minutes. Add baby spinach if using and cook until wilted.
Serve:
Garnish with fresh parsley and serve with mashed potatoes, pasta, or crusty bread.
