Creamy cheesy Bacon, Egg and Vegetable Casserole | ||
This is a hearty, versatile yet comforting dish. To our family, it is like putting our favourite ingredients all into one satisfying dish! This recipe is great for breakfast, brunch, dinner and even potlucks. It is certainly a crowd pleaser! Ingredients: Dash of oil 500g Bacon (can replace with chicken if prefer) 1 large onion 1 tsp crushed garlic Silverbeat (or any green vegetables) 4 celery stalks 8 medium potatoes 8 eggs 500g of mushrooms (sliced) 250g cream cheese 375g cream (can use milk instead) Salt and pepper Method: 1) Boil eggs. When cool, slice eggs, set aside. Boil sliced potatoes, then set aside. 2) Chopped Bacon, onion, celery, mushroom and vegetables. Fried them using oil, add in crushed garlic. Set aside this mixture. 3) Melt cream cheese and gently mix with cream. Add salt and pepper to taste. Set aside. 4) We are now going to layer our cooked ingredients. In an casserole dish, place cooked potatoes at the bottom layer, then add the fried mixture as the second layer. Then slice eggs as the third layer. Then repeat layers ie add sliced potatoes, then fried mixtures, then sliced eggs. Repeat until all ingredients are used up. Lastly, carefully pour in the cream cheese sauce. 5) Cover casserole dish and cook for 60 mins at 180 degrees. 6) Then add cheese of your choice on top and set to grill until golden. I like to serve this with cheesy bread on the side. | ||
