You see these kilo boxes of chicken necks at the supermarket...reduced to $2.50 or as low $1.99...what are you supposed to do with them?...most folk use them as dog food I think....

I bought 2 kilos...I laid them all out on a greased baking tray with sides..(don't waste the juice) and baked them for two hours (they will shrink)...then dump them in a thick bottom pan with lots of water and all the juice...and boil them for a few hours....refilling with water if needed...

I add a beetroot, carrot potato, onion and any veggies that look past their best...fresh herbs....but you do not have to....after 4 hours, strain this out into a second pan...let the contents cool...and let the liquid bubble away and reduce into a thick sauce....a REALLY beautiful stock....you will also be amazed that cooled chicken necks give you enough roast chicken to feed your dog for 3 or 4 days...AND the rest is wonderful as compost on your garden...or grind it up as stockfeed....
