Marinated Honey Soy Chicken Thighs on Coconut Rice bake

This is such a tasty rice dish with chicken and vegetables. It is very easy to make, filling and tastes delicious. Ideal for mid week dinnertime, comes together very quickly.

Ingredients:

Dash of oil
650g chicken thighs
4 stalks celery
2 peppers
4 small zucchini
1 large onion (chopped)
1 tsp paprika
1 tsp crushed garlic
Salt and pepper to taste
400g coconut cream or coconut milk
3 cups chicken stock
2 cups rice

Marinated chicken sauce:
1 cup of soy sauce
1/2 cup oyster sauce
1 tbsp Honey (melted)
1/2 tsp cornflour
1 tsp sesame oil

Method:

1) Cut chicken thighs into cubes. Marinate them in soy and honey sauce. I normally prepare them the previous night so they can marinate in the fridge overnight for maximum flavor.

2) Fry marinated chicken thighs in oil. Set them aside.

3) Cut celery, onion, peppers and zucchini. Fry them in oil until soft. Add salt, paprika, pepper, garlic. Gently combine ingredients. Set them aside.

4) Add rice. Carefully pour in chicken stock and coconut cream. Boil till rice is soft and all liquid are absorbed.

5) Gently mix in vegetables and marinated chicken thigh into the rice mixture.
