Mexican pasta bake | ||
Ingredients: - 500g mince meat (beef, chicken, or your choice) - 1 jar passata sauce - 1 packet taco seasoning mix (use half if you prefer less spice) - Grated cheese (cheddar or a cheese blend) - 1 onion (optional) - Vegetables of your choice (e.g. capsicum, corn, zucchini optional) - 250 300g pasta (penne, spiral, or your preferred type) Instructions: 1. Preheat oven to 160 180Β°C (320 355Β°F). 2. Cook the pasta in boiling water according to packet instructions. Drain and set aside. 3. Brown the mince in a pan over medium heat. If using onion or vegetables, add them and cook until soft. 4. Add the taco seasoning to the mince and stir well. Adjust the amount to suit your taste. 5. Stir in the passata sauce and let it simmer for a few minutes. 6. In a large oven-safe baking dish, combine the cooked pasta and mince mixture. Stir to mix evenly. 7. Top with grated cheese. 8. Bake in the oven for 15 20 minutes, or until the cheese is melted and golden. | ||
