Apricot shortcake crumble bars

Very moorish and has a similar shortbread style base. The topping is made by keeping 1/3 of your mixture aside and adding one or 2 crushed Granola bars into it, along with a pinch of nutmeg. Or you can use a crunchy muesli bar.

- Ingredients
170 gm butter (cold and cut into small cubes)
1/2 cup castor sugar
1+1/4 cups plain flour
1/4 cup Self Raising flour
Tsp vanilla
Pinch salt
1/2 large egg (beaten) or 1 nice small egg !
4 good Tbsps apricot jam (melted down with a dash of water)

- Method.
Place your sifted flours salt and sugar with cubed butter into a food processor and blitz a few times until it begins to form a crumble .Add in the vanilla and your beaten egg . Pulse it together a few more times until it's a loose type dough .
Then press 2 thirds of this mix into a standard small sized square tin ( lined or greased )
Push down with hands to form an even base ,then prick with a fork all over .

Bake in oven at 190 Β°c for @ 5mins to get things started..
Remove from oven and layer on your apricot jam filling .
Sprinkle over top with remaining shortbread mixture which has the Granola crumble through it .
Press down lightly and bake for a further 12 - 15 mins.
Cool down and cut into bars .
Yes you can freeze these !
