Chicken Thighs & Potatoes

Ingredients:
- 5 Chicken thighs
- Salt and pepper
- 5 Potatoes
- 2 Carrots
- 3 Garlic cloves
- 1 Onion
- A small bunch of Parsley
- 50g Butter
- 80g Honey
- 80g Sweet chili sauce
- 50ml Soy sauce
- 1 tablespoon Mustard
Directions:
1. Season chicken thighs with salt and pepper.
2. Cut potatoes into chunks.
3. Coarsely chop carrots.
4. In a pan, fry chicken thighs in butter for 5 minutes on each side.
5. Finely chop the onion, garlic, and parsley.
6. Remove thighs and add potatoes, carrots, onion, garlic, and parsley to the pan. Fry for 10 minutes.
7. In another pan, mix honey, sweet chili sauce, soy sauce, and mustard.
8. Place potatoes in a baking dish, add chicken thighs on top, and pour the honey sauce over.
9. Bake in the oven at 180°C (350°F) for 40 minutes.
