Greek Fasolakia Lathera (Olive oil braised beans)

Ingredients
500 gram green beans trimmed
3 tablespoons olive oil
3 medium potatoes peeled and cut into large chunks
2 carrots sliced into thick rounds
1 large onion finely diced
3 cloves garlic minced
1 tablespoon tomato paste
1 cup vegetable stock
1 can crushed tomatoes
1 bay leaf
1 teaspoon oregano
Salt and pepper to taste
Instructions
Heat most of the oil in a pot over medium heat. Add onion, garlic, potatoes, carrots and cook until softened.
Add tomato paste and can of tomatoes, vegetable stock, bay leaf, oregano, salt and pepper and stir well. Simmer for 15 minutes and then add the beans. Cook for a further 30 minutes or until potatoes are cooked and the sauce has thickened.
To serve remove the bay leaf, drizzle with the remainder of the olive oil and enjoy with crusty bread.
