Zesty Lemon Herb Chicken

Ingredients:
2 boneless, skinless chicken breasts
2 tablespoons olive oil
Juice of 1 lemon
Zest of 1 lemon
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Marinate the Chicken
In a small bowl, mix olive oil, lemon juice and zest, garlic, oregano, thyme, salt, and pepper.
Place chicken breasts in a shallow dish or zip-lock bag. Pour marinade over the chicken, ensuring it s well-coated.
Let it marinate for at least 15 minutes (or up to 4 hours in the fridge for more flavour).
Cook the Chicken
Heat a skillet or grill pan over medium-high heat.
Remove chicken from marinade and cook for 6 8 minutes per side, or until golden brown and cooked through (internal temperature of 75°C / 165°F).
Rest and Serve
Let the chicken rest for 5 minutes before slicing.
Garnish with chopped parsley and serve with a side of roasted vegetables, salad, or rice.
