Grandma's Zucchini Bread

I always thought my grandmother should have written a cookbook. I don't think she'd have minded me sharing some of her recipes:
3 cups flour
1/4 cup sugar
2 eggs
5 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 cup buttermilk
1 cup shredded zucchini
3 tbsp. grated cheese (parmesan or romano)
1/3 cup melted butter
(You can make your own buttermilk by adding 2 tbsp. white vinegar to milk; let stand 5 minutes before using.)
Mix all dry ingredients. Add zucchini and liquids; mix well. (Batter will be dry.) Spread dough in a greased pan. Bake in oven at 350 degrees for one hour. Let cool and serve.
