Coconut Laksa Dumpling Soup | ||
Much easier than it looks! - in fact, it's a great midweek cheat. * Simply head down to your supermarket and grab a container of laksa soup from the fresh soups refrigerator section. Then head to the freezers and grab your favourite dumplings. I've used chicken laksa here and pork dumplings. Extras - Small can coconut cream 1 stock cube 2 cloves crushed garlic Half an onion (sliced ) 1tsp turmeric. Vegies ( I used half a carrot, a few beans ,beanshoots, ) Method- In a larger pot simmer dumplings with the stock cube in enough water to adequately cover them . * Optional, you can add 1 stick of lemongrass to this and some lime leaf also. Cook gently until dumplings are ALMOST done and remove from heat. Add in your bought laksa and rest it. Next In a smaller pot - Fry off Tumeric, garlic onions and veg. Add canned coconut cream and reduce it by half. Add this to your main pot . Reheat gently and add extra chilli and fish sc or coriander if you want some extra punch ! | ||
