KFC eat your heart out!
APBJun 04, 25
Get a pot on the boil... dump in some onions, other veg lying around, and any herbs and spices you have or love... you are making a stock... it is EASY... and some salt... some powdered chicken stock... and boil it up!
Next, add your chicken cuts and let them poach till cooked (or a whole chicken if you want!)
Allow to cool completely.
Next, you'll need three bowls:
One has flour in it.
One has an egg beaten up in some milk.
The magical one has finely smashed-up cornflakes and some paprika.
Heat up a deep pan with oil.
Put each portion of chicken in each bowl... flour first... egg wash second... and the magic mix third... gently fry each piece on both sides until golden and then allow to drain.
It isn't difficult, and the result is pretty amazing.

            • Sounds familiar. Some things can't be improved -- things from the past are the best. Remember this from when I was a child.

              • APB, thanks for the recipe. You've reminded me to put cornflakes on my next online shop! I have always coated chicken in the flakes, I was taught this little trick by my younger sister over 40 years ago. She also used them to make sausage meat rissoles and crumbed piggy bits for a lovely crunch. Ps. This is the only reason I buy cereals rice bubbles etc. because I do not like soggy cereals at the breakfast table.

                            • It's better cooked in the oven than fried, though. Probably ok in an air fryer if you subscribe to that hype.

no I don't have an air fryer, couldn't justify the expense of all those things when I have perfectly good appliances still working in my kitchen

                                • I prefer to cook chicken in the air fryer, faster, less fat and extra crispy.

                                    • Back when I was a kid, I can remember my mother using crushed up cornflakes to coat meats when she ran out of breadcrumbs. They always tasted amazing. Your chicken recipe sounds delicious. Thx for sharing.

                                          • Nice , i would even blend a quarter panko crumbs through the flake mix as well. Ooh what a joy for a leftovers reheat in my airfryer !

                                                        • Yes, that's exactly my recipe APB. I also do it on my Chicken snitzels except I don't cook them first. Make my own Kelloggs crumbs myself, have been doing it long before you could buy the crumbs. I use CornFlake crumbs in place of breadcrumbs for lots of things.
