Quick and Easy Creamy Apricot Pie

This recipe is my go to for a quick, easy yet delicious Apricot Pie. This Apricot fruit pie is loaded with many different flavors and textures that will blow your taste buds away!!
Ingredients:
1 packet of puff pastry dough defrosted
1 kg apricots
1 cup brown sugar (you can replace it with white sugar)
1 tbsp flour
1 tbsp cornstarch
Creamy Filling:
250g Cream Cheese
1/3 cup brown Sugar (you can replace it with white sugar)
1 tsp vanilla essence
Method:
1) Place the apricots into a pot, simmering for about 5 minutes or until the skins are able to be peeled off. Careful not to overcook.
2) Peel and remove the pit from the apricots and place them in a bowl with the sugar, cornstarch and flour.
3) Place your first puff pastry sheet that has been slightly rolled out to fit the baking pan and fill it with the apricot mixture. Beware of hot mixture
4) Then put the second sheet on pastry dough and brush it lightly with egg. Sprinkle with brown sugar.
5) Bake this on a very hot preheated oven 220 degrees for about 45 minutes or until the top is crisp and golden brown. I start to check after 30 minutes to ensure it is not burnt on the top.
6) I then serve the Apricot pie with ice-cream or/and yogurt. Enjoy!
