Vegetable Stir Fry

Ingredients

1 packet vermicelli rice noodles
1 tablespoon vegetable oil
1 onion sliced
4 cloves garlic, finely sliced
I cup of broccoli cut into small pieces
I large carrot, thinly sliced
I red capsicum thinly sliced
4 eggs

Sauce

4 tablespoons soy sauce
2 tablespoons honey
I teaspoon black pepper
1/2 a teaspoon chilli flakes (optional)

Method

Mix soy sauce, honey, black pepper and chilli flakes and set aside.
Prepare noodles as per packet instructions.
Add oil to a frying pan and cook onion and garlic over a medium heat for 2 minutes, add broccoli, carrots and capsicum and cook until softened.
Add the noodles and sauce and mix until well combined and cook for 3 minutes.
Fry eggs in the mean time.
Serve noodles and add the fried egg on top.
Enjoy!
