Easy and Quick Chicken Curry

2 lb chicken
1 onion
1/2 tsp ginger
1 tbsp oil
1.5 tbsp curry powder
1 tsp salt
1 cup rice cooked
1 cup water
1/2 tsp sugar
1 cup coconut milk
Cut the chicken into bite-sized pieces.
Heat the oil in a large skillet over medium heat.
add the chopped onions and ginger and cook for 3 minutes. Add the chicken and cook all the way through.
Sprinkle in curry powder, salt and sugar. Stir for 1 minute. Stir in the coconut milk
(If needing more liquid add in the water)
and let simmer for 10 minutes.
Serve alongside rice.
