Egg Fried Rice | ||
Ingredients: 2 cups cooked rice (leftover rice works best) 2 eggs 1 small onion (chopped) 1/2 cup mixed vegetables (like carrots, peas, corn optional) 2 tbsp soy sauce 1 tbsp oil Salt and pepper to taste Green onions (optional, for garnish) Instructions: 1. Heat oil in a pan. Add chopped onions and cook until soft. 2. Push onions to the side, crack in the eggs, and scramble until cooked. 3. Add veggies (if using) and stir-fry for 2 3 minutes. 4. Add cooked rice and soy sauce. Mix well. 5. Season with salt and pepper. Stir everything together until hot. 6. Garnish with green onions and serve hot! | ||
