Apricot Chicken | ||
This is another very simply throw together recipe using only a small number of ingredients. 8 chicken drumsticks or 4 diced chicken breasts. 1 x 400 ml can of apricot nectar. 1 x packet of french onion soup. Sour cream (optional). Water if mix becomes too thick. Mix apricot nectar and a third of the soup mix. Keep in mind that the packet mix can be salty. You can add more later depending on your own taste. Likewise add water if it becomes too thick. Add the cream and mix together. Pour over the chicken and slow cook over a low heat for about one hour. (a couple of beers or lemon squashes for the non drinkers). I use a wok for most of my cooking. Goes well over steamed rice. Spring onion and capsicum can also be added while cooking, if you feel like it. They also add a bit of colour. I am heading to Vietnam at the end of August.
