Rosati Chicken livers

500 grams of chicken livers...just drain and clean them (dogs and cats love the scraps)...chop them up in chunks..dust them in flour and set aside...heat a frying pan and put equal quantities of onion celery and carrot finely diced and lightly fry them in olive oil...then add the livers...lightly cook..add a cup of chicken stock and some black pepper...season with salt or fish sauce as required...as it thickens add a little milk and allow to cook through...I cook off some penne to serve with this...but use what you want...and a sprinkling of Italian parsley on top....enjoy!
